"Sweet and fruity, with a hint of spice, these Clootie dumplings are suitable for vegetarians. To bring clootie dumplings up-to-date in terms of health-consciousness I've substituted the traditional cholesterol-laden beef suet with rapeseed oil which is high in unsaturated fat.
I use no eggs or nuts in our recipe, and each clootie contains almost 50% raisins and apple, providing a good serving of healthy fruit."
